Everyone is at home! I am working from home at the same time trying to homeschool my son, and I am in the kitchen most of the day thinking of quick snacks and lunch ideas. It’s not only the child but also the man in the house has a list of things that he craves for out of the blue. However, it’s a pleasure baking and cooking for them.

This mini cheese pizza dough recipe is the same as my Seeni sambol bun recipe. The dough is enriched with butter, milk, and a little sugar, which is different from traditional pizza dough. These mini cheese pizzas are soft and delicious. The mini cheese pizzas freeze well and fantastic for a crowd. Especially these days, when all the kids are at home, you can make it a fun activity asking the kids to create a unique topping for their pizzas. Who knows, it might become a family favorite.

Mini Cheese Pizza dough
Ingredients
- Flour
- sugar
- yeast
- milk
- butter
- salt
- water
How to make the Pizza dough
This dough is similar to my Sri Lankan Egg & Seeni Sambol Buns and Paneer Stuffed Buns recipes. The only changes I made in the recipe is doubling the butter by 2 more Tablespoons and interchanging the milk and water quantity. ( 1 cup of milk and 1/2 cup of warm water).
I made about 20 3 1/2 inch mini pizzas with this dough. You can double it or halve it for your preference. Use whole milk and don’t use fat-free or low-fat milk. Use 2 tablespoons of dry milk instead of whole milk. I have used fresh milk in the recipe because all of us don’t have dry milk in our pantry.
- Combine flour, yeast, sugar, salt, and butter in a large bowl.
- Make a well in the center.
- Add warm water and milk to the flour mixture and knead it to form a very soft dough.
- Turn the dough onto a floured surface and knead the dough for 10 minutes or until the dough springs back.
- Put the dough into an oiled bowl and cover the bowl with cling wrap and leave it somewhere warm for 1 hour or till the dough is doubled in size.
- Punch the dough down, leave it to rest for 10 minutes and shape the dough.

- Pizza Dough
500g/4 cups all-purpose flour
2 1/4 teaspoons/7 g instant yeast
1 cup / 240ml of whole milk
½ cup/ 120ml of warm water
60 g/ 4 Tablespoons unsalted butter
1 teaspoon salt
1 teaspoon sugar
- Assembling the Pizzas
3 cups / 330g shredded Mozzarella Cheese
Directions
- Combine flour, yeast, sugar, salt, and butter in a large bowl.
- Make a well in the center.
- Add warm water and milk to the flour mixture and knead it to form a very soft dough.
- Next, turn the dough onto a floured surface and knead the dough for 10 minutes or until the dough springs back.
- Put the dough into an oiled bowl and cover the bowl with cling wrap and leave it somewhere warm for 1 hour or till the dough is doubled in size.
- Punch the dough down, leave it to rest for 10 minutes and shape the dough.
- Meanwhile, preheat the oven to 190° C/374°F
- Divide the dough into half. Next, roll each half into a log and divide each log into 10 equal size pieces.
- Roll each ball of dough into about 3 .5 inch circles. Place the circles on a parchment paper-lined sheet pan.
- Put 1 teaspoon of sauce on each circle and top it with mozzarella cheese or with your favorite toppings.
- Bake the pizzas for 12- 15 minutes.
- Serve warm.
Notes
- Freezer Instructions- Cool them completely, place the pizzas in a freezer ziplock bag and freeze them for 3 months.

I have attempted several times various recipes for pizza. But none of them turned out as the way I wanted. Simply attempted Ruwi’s pizza recipe and it turned out amazingly well as the way we expected. My husband is very particular about the softness and this recipe was a big hit.
I used several toppings and the tomato puree was used as the sauce. For some, i used Italian seasoning and that too worked well.
I really recommend Ruwi’s pizza recipe for anyone who is looking for a soft base pizza.
