Watermelon & Pomegranate Salad with Feta

Here is another summer favorite, Watermelon & Pomegranate Salad with Feta. This salad is sweet, slightly tangy, and so refreshing!

When I think of summer fruits, the first few things that come to mind are watermelon, berries, and peaches. I am sure you feel the same too.

Among many summer salads, we love having this Watermelon & Pomegranate Salad with Feta. This salad is made very often during summer and few times during other seasons too.

The salad has all the component that is needed to please our palette. The sweetness of the watermelon, the tart, fruity, and earthy flavor of the pomegranate complements each other when you add in some of the salty and creamy feta. This salad is excellent served with some grilled chicken or BBQ meat of your choice.

How to make Watermelon & Pomegranate Salad with Feta

The Salad recipe is simple to make, and you will need only 15 minutes to put it together. Gather the ingredients and prep them ahead of time without adding the dressing. Place it covered in the refrigerator. Add the salad dressing just 10 minutes before you serve.

Ingredients

The tricky part is picking a good watermelon that is ripe & sweet. To my understanding, a good watermelon should sound hollow when tapped, should have a darker rind with dark yellow patches and webbing on it.

 Let’s look at the pomegranate. A ripe and juicy pomegranate should be heavier, lightly flattened with angular sides, and smooth skin. Avoid perfectly round fruits.

Other ingredients for the salad are red onions, romaine lettuce, mint, and feta cheese. There were many times I have made this salad without feta. It still tastes good! 

When I like a little bit of heat, I do add chopped jalapeno or green chilies. The chili balances the sweetness perfectly.  

Dressing for the salad

 It is a simple dressing that you can make ahead of time. All you need is some spicy brown mustard paste/ regular mustard, salt, pepper, olive oil, and lemon juice. Mix all the ingredients and pour them on top of the salad. Toss the salad with the dressing a few times until it coats well. Serve with your favorite grilled meat or just as it is.

Ingredients

• 3 cups cubed Watermelon

• 1 cup pomegranate arils

• 1 small red onion thinly sliced

• 1 cup shredded romaine lettuce

• 1 Tablespoon thinly shredded fresh mint leaves

• 30g- 50g of feta cubed/crumbled

• For the Salad Dressing

• 1 Tablespoon of spicy brown mustard/ regular mustard

• 1 Tablespoon lemon juice

• 1 Tablespoon extra virgin olive oil

• 1/2 teaspoon salt

• 1/2 teaspoon freshly ground black pepper

Directions

• In a large bowl, add the cubed watermelon, pomegranate arils, thinly sliced red onion, shredded lettuce, mint, and cubed feta.
• Next, pour in the salad dressing and toss the salad a few times to coat it. Serve just as it is or with your favorite grilled meat.
• Making the Salad Dressing
• In a small bowl: add the mustard, lemon juice, olive oil, salt, and pepper.
• Whisk the dressing until well combined. Pour it over the salad and toss until coated.
